Rise and Shine Banana Bread (GF)

Get ready to try the worlds best banana bread, and its gluten free! now do not be turned off by the fact that it is gluten free, because this recipe is to die for. It is simple to make and not really..... that fattening, just remember you can eat whatever you want for breakfast because you will work it off throughout the day right? haha..

1 cup brown sugar
125g butter melted
1 tsp vanilla essence
3 over ripe bananas, mashed
3 tbs Greek yoghurt
1 tbs honey
2 free range eggs
1 1/2 gluten free all purpose flour
1 tsp baking powder
1 tsp baking soda
3 tbs of LSA meal
2 tsp Cinnamon
Handful of Walnuts
2 bananas sliced long ways


In a mix master (or with by hand if you are game) mix brown sugar, melted butter and vanilla essence until smooth and colour had turned pale

Add banana, Greek yoghurt and eggs to sugar mix and continue to mix until all combined

Sift gluten free flour into wet mixture, add bak

ing soda and baking powder. Fold flour into wet mixture (do not over fold as your banana bread will turn out dense and hard)

Pour mixture into a lined bar loaf tin. Top with sliced banana, walnuts, cinnamon

Bake in a 180 degrees oven for 25 minutes or until golden brown

Serve with ricotta or butter 🧈
